Arguably one of the most familiar smells around the holidays is the smell of a freshly cut Christmas tree. The time spent decorating the tree and the excitement in the days to follow as all the presents slowly begin appearing under the tree. Gentle Christmas music playing in the background and a winter’s snow falling. All the things that make Christmas as truly magical as feels every year. Gold and Ivy’s Everygreen Forest captures that feeling in its truest form, but everyone knows that the only thing that is better than filling your home with the aroma of Christmas is sitting in your home admiring the gifts under the tree with a drink in hand. This cocktail brings both of those worlds together in a deliciously refreshing way. The earthy notes of the authentic balsam fir simple syrup with the magically refreshing cranberry and sparkling water will absolutely remind you of every aspect of Christmas…unless of course you’re the grinch.

Balsam Fir Syrup

  • 1 cup balsam fir needles, roughly chopped
  • 2 cups granulated sugar
  • 2 cups water
  • 1½ tsp lemon juice

Ok, this drink might make you work a little bit, but it is very worth it! In a medium saucepan combine sugar and water, heat over medium-high to high until boiling and sugar is dissolved, stirring occasionally. When boiling remove from heat, stir in pine needles lemon juice. Cover and let sit until room temp, taste, and allow to sit longer if you want a stronger flavor. When it’s ready, strain the syrup to remove the pine needles. Any left over syrup is fine to bottle up and put in the fridge for later.

Balsam Gin Sparkler

  • 1½ oz citrus forward gin (Beefeaters seems to work fine)
  • 1 oz balsam syrup
  • 1 oz cranberry juice
  • 2 oz sparkling water
  • Frozen cranberries, for garnish

Fill a glass with ice and top with the gin, syrup, juice, and sparkling water. Give a stir. Top with juice, and garnish with a few frozen cranberries. Enjoy with an Evergreen forest candle lit nearby to complete the pairing.
